The umami-rich teriyaki tuna from Pirate Cannerie transforms an everyday pantry staple into something altogether more refined. Served on toasted sourdough from your favourite local baker with fresh dill, a squeeze of lemon, and flaky sea salt, it makes a perfect protein-rich snack or light appetiser.
The fish comes first
Pirate Cannerie prepares tender fillets of albacore tuna (Thunnus alalunga) sourced from the waters off the French Basque coast. Handcrafted in small batches, each fillet retains its delicate texture before being finished with a glossy teriyaki glaze that brings gentle sweetness, savoury depth, plenty of umami, and a subtle touch of ginger.
With fish of this quality, there is little need for embellishment. Toasted sourdough provides a crisp foundation, while fresh dill adds a clean herbal freshness that lifts the richness of the tuna. If fresh dill is unavailable, a drizzle of dill oil offers a similarly aromatic finish.
Ingredients (Serves 2)
• 2 thick slices of sourdough bread
• 1 tin Pirate Cannerie Teriyaki Tuna
• A handful of fresh dill or dill oil
• ½ lemon
• Flaky sea salt (used: Fleur de Sel de Guérande Sea Salt from Artisans du Sel)
Preparation
1. Toast the sourdough until golden and crisp around the edges while remaining soft in the centre.
2. Spoon generous flakes of Pirate Cannerie Teriyaki Tuna over the warm toast, allowing some of the sauce to coat the bread.
3. Scatter over the fresh dill or drizzle with dill oil.
4. Finish with a squeeze of fresh lemon juice and a pinch of flaky sea salt.
Serve immediately while the toast is still warm. Eat well.
