The Ingredients (For 2–3 Servings)
• 250 g Mancini Spaghettini
• 250 g chanterelle mushrooms
• 1 small shallot, finely diced
• 1 garlic clove, finely chopped
• Olive oil (I used Koroneiki EVOO from Honest Toi)
• 200 ml heavy cream
• Salt (I used Fleur de Sel from Artisans du Sel)
• Freshly ground black pepper
Preparation
1. Clean the chanterelles under running water using a brush. Halve or quarter any larger ones.
2. Boil the spaghettini in well-salted water until al dente. Reserve ½ cup of the pasta water. Drain and toss with a little olive oil to prevent sticking.
3. Heat olive oil in a wide pan. Add shallots and cook until translucent (about 2 minutes). Stir in the garlic and cook briefly.
4. Increase the heat, add the chanterelles, and sear until golden and slightly crisp at the edges (6–8 minutes). Deglaze with a splash of the reserved pasta water, scraping up any golden bits.
5. Stir in the cream and let simmer for 3–4 minutes until slightly thickened. Season with freshly ground pepper.
6. Add the drained pasta and toss to coat. Loosen the sauce with more pasta water if needed.
Serve on your favourite pasta plate, pour a glass of wine, and enjoy. Eat well.
