Founded in 2019, MAD LAB is an organic artisan biscuit and cracker bakery in Brussels, led by founders David and Cyril. With a dedicated team of five, MAD LAB crafts crackers using high-quality, locally sourced ingredients like stone-ground Belgian flour and upcycled spent grain from local breweries. By transforming brewing byproducts into delicious, fiber- and protein-rich crackers, they champion a zero-waste approach without compromising on taste or quality.
