In Loconia, a small village in Puglia that comes alive each August during the harvest of its celebrated percoca peaches, a distinctive jam is crafted with remarkable character. The peaches bring a rounded, sun-soaked sweetness, while the chili adds a gentle warmth and a pleasant kick that unfolds slowly without ever overpowering. Bold and expressive in flavour, it pairs beautifully with aged cheeses, roasted meats, pâtés, charcuterie, or simply spread on toasted bread.
