Bishan Wate is a layered and expressive washed Ethiopian coffee from the Guji region, offering bright notes of orange peel, bergamot, and peach candy with a clean, sweet finish. Sourced from around 50 smallholder farmers who deliver their perfectly ripe cherries to the Bishan Wate Washing Station, this lot is processed with exceptional care. After depulping and washing, the beans undergo a 48-hour fermentation and slow drying on raised beds to preserve clarity and complexity. This premium preparation uses selectively harvested cherries from a single day’s pick, resulting in a limited, highly consistent lot. A vibrant, elegant filter coffee that truly stands out.

Swerl is a micro roastery shaped by curiosity, craftsmanship, and a genuine love for great coffee. Founded by Beatriz, a trained sommelier, and Daniel, an aircraft technician, the journey began in 2018 during a year in New Zealand — where they first discovered the depth of specialty coffee and the community surrounding it. That spark became the foundation for Swerl.
