This washed Tabi from producer Jhon Jairo Gómez is vibrant, syrupy, and deeply expressive — tasting of tropical fruits, orange marmalade, and delicate florals. Grown at an exceptional altitude of 1950–2000 masl in El Rosario, San Agustín, the cooler temperatures slow cherry development, resulting in remarkable sweetness and clarity. In recent years, Jhon has transformed his farm, building his own beneficio with a motorised depulper and solar dryer, allowing him to process every step with care and precision. Fermented in sealed bags for 24 hours and then in tiled tanks for 36 hours, this lot shows the potential of Tabi when handled thoughtfully. Sourced through Semilla and the Monkaaba project.

Swerl is a micro roastery shaped by curiosity, craftsmanship, and a genuine love for great coffee. Founded by Beatriz, a trained sommelier, and Daniel, an aircraft technician, the journey began in 2018 during a year in New Zealand — where they first discovered the depth of specialty coffee and the community surrounding it. That spark became the foundation for Swerl.
