Flaky and tender, this whiting-pout from the cod family is cooked with garlic and extra virgin olive oil for a rich yet clean flavour. Caught by local fishermen in the Bay of Biscay, France, and tinned by hand in small batches at Pirate Cannerie. Serve warm with rice, sautéed greens, or crusty focaccia.
