These Smoked Chili Flakes from Daphnis and Chloe are made with rare Karatzova peppers, cultivated by just a few families in the northern frontier of Almopia, Greece.

Once fully ripe, the peppers are washed, hand-sorted, and slow-smoked over birch wood for 10 days. Farmers take turns tending the fire around the clock to ensure a steady, fragrant smoke. After smoking, the peppers are destemmed and crushed by hand. In Greece, this style of crushed red pepper is known as Bukovo—a traditional pantry staple prized for its sweet heat and smoky depth.

Karatzova peppers have been grown in the region since Ottoman times but nearly disappeared in the 1980s. Thanks to Daphnis and Chloe’s commitment to culinary heritage and their collaboration with micro-farmers who use non-invasive methods, this unique variety and artisanal process live on today.
