Braised white tuna belly, the most prized cut of the tuna, known for its tenderness and rich flavour. This version from Pirate Cannerie is lightly hot-smoked over beechwood, then preserved in extra virgin olive oil to maintain its delicate texture and depth. Made with albacore tuna sustainably caught in the Bay of Biscay and produced by hand by Pirate Cannerie, an independent modern French cannery based in Saint-Laurent-de-Gosse, France. Ideal enjoyed simply on bread, with salads, or as part of a refined appetiser.
