Produced in collaboration with the Caelles family, mountain olive growers from the Barcedana Valley in Pallars Jussà, this single-variety extra virgin olive oil celebrates the native Arbequina olive. Harvested in early October from centuries-old trees in a picturesque valley between two mountain ranges, cold-pressed and produced exclusively using mechanical processes. This extra virgin olive oil has notes of green fruit and grass. Limited to only 500 bottles.

The story behind Solo Aceite

Based between San Sebastian, Jaen, und Madrid, Solo is a small-batch extra virgin olive oil company founded in 2018 by siblings Ana and Juan Vargas Azorit as a tribute to their grandfather, Juan Antonio. Rooted in family heritage, their journey began with bottling 250 liters of olive oil sourced from trees nurtured by their grandfather and great-grandparents.
